Maryland is the leg and thigh of the duck with the backbone in. This is usually the portion that is used for Confit. Similar to lamb shanks, it can be cooked quickly, roasted (approx 45 mins) or amazingly slow cooked. It produces the most tender, moist duck meat that simply falls off the bone.
